Hi, Penny. Sorry I didn't reply Thursday but I was out of town on a video shoot for a client. I use Skype extensively for podcast interviews, and we actually dial out through Skype for my client Todd Cohen's BlogTalkRadio show, so that we can use my production mixer to combine microphones for the show.
Skype provides astoundingly clear sound quality fr many one-on-one interviews, and so we try to use it on both ends when we do a phoner. Also, many of the recording tools available for capturing a Skype call allow you to split the participants on a Right-Left stereo spread, so that in postproduction you can edit the voices independently. That helps if one person steps on the other person's lines.
Finally, it's very cost-effective. When I was speaking in Manila two years ago, I gave my wife my local Skype-In phonne number right in our hometown, she dialed that number and it rang Skype on my laptop in Manila, and cost her exactly $0.00 to make the call!
