Go to http://www.Mogulus.com. There you can do multi web cam recordings with people anywhere in the world, just as if you were doing a news show. Very cool.
Also, if you and the interviewee both have a webcam recorder, you can both record yourselves at the same time and then they can send you their recording, and you can edit them together. If you don't have a multitrack video editing system, where you can lay them on one track and you on the other simultaneously, a cheat way to do it would be for each of you to record each segment as a separate video, i.e.:
You record yourself doing the introduction and asking the first question. You stop recording and save that as lm-01. Then they record themselves with the answer (let's say it was Teddy) and save it as tt-01. You do that until the interview is over. It is not quite as fluent, but you end up with a really good quality video with no one talking over the other person, and you can paste them together in Camtasia very easily.
